- 2 cups cooked chicken, diced (rotisserie chicken works great)
- 1 red bell pepper, diced
- 1 cup corn (fresh, frozen, or canned and drained)
- 1 cup black beans, rinsed and drained
- 1 avocado, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup cilantro, chopped (optional)
- 1 lime, juiced
- 1/2 cup Greek yogurt (or mayonnaise for a richer flavor)
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper, to taste
Instructions
- In a large mixing bowl, add diced chicken, red bell pepper, corn, black beans, avocado, red onion, and cilantro. Gently toss everything together until well combined.
- In a separate small bowl, whisk together the lime juice, Greek yogurt, cumin, chili powder, salt, and pepper to create the dressing.
- Pour the dressing over the salad mixture and gently toss again until everything is evenly coated.
- Cover and refrigerate for at least 30 minutes to allow the flavors to blend. Serve cold or at room temperature.
Notes
For best results, chill before serving to let all the flavors meld together. For a spicy twist, add some jalapeño slices. This salad is also great for meal prep – just add avocado right before serving to keep it fresh.
