- 1 (20-ounce/567g) can crushed pineapple with juice
- ¾ cup (100g) chopped pecans
- 2 cups (90g) mini marshmallows
- 1 (8-ounce/227g) tub frozen whipped topping, thawed
- Optional: extra pecans, extra mini marshmallows, maraschino cherries, whipped cream for garnish
Instructions
- In a large bowl, mix the pistachio pudding mix with the crushed pineapple and juice until fully blended.
- Fold in the mini marshmallows and chopped pecans evenly.
- Gently fold in the whipped topping until the mixture is light and fluffy.
- Cover and chill in the refrigerator for at least 1 hour.
- Top with extra marshmallows, pecans, cherries, or whipped cream before serving, if desired.
Notes
Make it ahead for even better flavor. For nut-free, skip the pecans. Try adding mandarin oranges or using toasted almonds for a twist.
