Description

This vintage-style Watergate Salad is a creamy, fluffy, no-bake dessert made with pistachio pudding, pineapple, marshmallows, and whipped topping. It’s a nostalgic crowd-pleaser perfect for holidays and potlucks.


Ingredients

  • 1 (3.4-ounce/96g) box instant pistachio pudding mix
  • 1 (20-ounce/567g) can crushed pineapple with juice
  • ¾ cup (100g) chopped pecans
  • 2 cups (90g) mini marshmallows
  • 1 (8-ounce/227g) tub frozen whipped topping, thawed
  • Optional: extra pecans, extra mini marshmallows, maraschino cherries, whipped cream for garnish

Instructions

  1. In a large bowl, mix the pistachio pudding mix with the crushed pineapple and juice until fully blended.
  2. Fold in the mini marshmallows and chopped pecans evenly.
  3. Gently fold in the whipped topping until the mixture is light and fluffy.
  4. Cover and chill in the refrigerator for at least 1 hour.
  5. Top with extra marshmallows, pecans, cherries, or whipped cream before serving, if desired.

Notes

Make it ahead for even better flavor. For nut-free, skip the pecans. Try adding mandarin oranges or using toasted almonds for a twist.
