Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix sliced apricots with 1/4 cup sugar, lemon juice, and vanilla extract. Let sit for 10 minutes.
- In another bowl, combine oats, flour, remaining sugar, cinnamon, and salt. Stir in melted butter until crumbly.
- Spread the apricot mixture in a greased 9×13-inch baking dish.
- Evenly sprinkle the oat mixture over the apricots.
- Bake for 35-40 minutes until topping is golden and fruit is bubbly.
Notes
