Description

Ingredients

  • 3 cups mixed greens (or swap with spinach or arugula)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 cup strawberries, sliced (or blueberries)
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup balsamic vinaigrette
  • 1/4 cup toasted nuts (almonds or walnuts)

Instructions

  1. Rinse all produce well for the freshest flavor.
  2. In a large mixing bowl, combine the greens, tomatoes, cucumber, and strawberries. Toss gently.
  3. Add feta and red onion, then drizzle with balsamic vinaigrette.
  4. Just before serving, sprinkle toasted nuts for crunch and give a final toss.

Notes

To lighten it up, use a yogurt-based dressing or replace feta with avocado. Keep components separate if storing for later. For a spicy kick, add jalapeños or red pepper flakes.
