Moist, flavorful, and filled with the sweet richness of ripe bananas and crunchy nuts, this banana bread is the ultimate cozy kitchen companion.
Ingredients
Scale
- 3 ripe bananas, mashed (about 1.5 cups)
- 1/3 cup melted butter (or coconut oil for dairy-free)
- 1 cup sugar (or 3/4 cup for less sweetness)
- 1 large egg, beaten (or flaxseed meal for vegan)
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
- 1.5 cups all-purpose flour (or whole wheat for healthier option)
- 1/2 cup chopped walnuts or pecans (optional but recommended)
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- Mash bananas in a bowl until smooth using a fork.
- Mix in melted butter, then stir in sugar, egg, and vanilla until fully combined.
- Add baking soda and salt, then mix in the flour just until incorporated.
- Fold in nuts if using, distributing them evenly.
- Pour batter into prepared loaf pan and smooth the top. Bake for 60–65 minutes or until a toothpick inserted comes out clean.
- Let cool in pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
Make sure bananas are fully ripe for best flavor. Avoid overmixing to keep the bread light. Add chocolate chips, dried fruit, or warm spices for variation. Leftovers freeze well wrapped tightly.
