Description

These Turkey Zucchini Fritters are a crispy, flavorful, and nutritious dish made with lean turkey and fresh zucchini. Perfect for a quick weeknight dinner, a healthy snack, or a fun family meal.

Ingredients

Scale
  • 1 pound ground turkey (chicken or beef can be substituted)
  • 2 medium zucchinis, grated (yellow squash works too)
  • 2 large eggs (or flaxseed meal + water for vegan substitute)
  • 1 cup breadcrumbs (or almond flour for gluten-free)
  • 2 garlic cloves, minced
  • 1 small onion, finely chopped (green onions can also be used)
  • 1/4 cup Parmesan cheese, grated (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • Olive oil for frying

Instructions

  1. Grate the zucchinis and squeeze out excess moisture using a kitchen towel to avoid soggy fritters.
  2. In a large bowl, mix ground turkey, grated zucchini, eggs, breadcrumbs, garlic, onion, Parmesan cheese, salt, and pepper until well combined.
  3. Heat olive oil in a skillet over medium heat. Shape the mixture into small patties, about 2-3 inches wide, and place them in the pan without overcrowding.
  4. Cook fritters for 4-5 minutes on each side until golden brown and cooked through. Keep warm in the oven while cooking the rest.

Notes

To keep fritters crispy, sprinkle a little flour if the mixture feels too wet. Carrots, spinach, or fresh herbs like basil can be added for extra flavor. Store leftovers in the fridge for up to 3 days or freeze for up to a month. Reheat in a skillet or oven before serving.
