- 1 small onion, finely chopped (green onions can also be used)
- 1/4 cup Parmesan cheese, grated (optional)

- Olive oil for frying
Instructions
- Grate the zucchinis and squeeze out excess moisture using a kitchen towel to avoid soggy fritters.
- In a large bowl, mix ground turkey, grated zucchini, eggs, breadcrumbs, garlic, onion, Parmesan cheese, salt, and pepper until well combined.
- Heat olive oil in a skillet over medium heat. Shape the mixture into small patties, about 2-3 inches wide, and place them in the pan without overcrowding.
- Cook fritters for 4-5 minutes on each side until golden brown and cooked through. Keep warm in the oven while cooking the rest.
Notes
To keep fritters crispy, sprinkle a little flour if the mixture feels too wet. Carrots, spinach, or fresh herbs like basil can be added for extra flavor. Store leftovers in the fridge for up to 3 days or freeze for up to a month. Reheat in a skillet or oven before serving.
