Description
Cool, creamy, and bursting with exotic fruit flavors, this Tropical Chia Pudding is the perfect blend of health and indulgence. Ideal for breakfast or dessert, it’s as refreshing as a beach getaway in a bowl.
Ingredients
Scale
- 1 cup chia seeds
- 4 cups coconut milk (or almond milk for variation)
- 1/2 cup honey or maple syrup (adjust to taste)
- 1 teaspoon vanilla extract
- 1/2 cup diced mango
- 1/2 cup diced pineapple
- 1/2 cup diced kiwi
- Fresh mint leaves for garnish (optional)
Instructions
- In a mixing bowl, stir together chia seeds, coconut milk, honey or maple syrup, and vanilla extract. Make sure the seeds are evenly mixed in.
- Let sit for 10 to 15 minutes so the seeds can soak up the liquid, stirring occasionally to keep it smooth.
- When the pudding thickens to your liking, spoon it into serving bowls or jars.
- Top with diced mango, pineapple, and kiwi for a burst of tropical freshness.
- Garnish with mint leaves if desired, and chill for at least an hour before serving.
Notes
Let the mixture rest long enough to fully thicken, and give it another stir before serving. Taste and adjust the sweetness or fruit combo to suit your preference. Add toasted coconut flakes or nuts on top for a crunchy twist.
