- 2 tablespoons olive oil
- 1 onion, diced
- 2 celery stalks, chopped
- 2 medium potatoes, peeled and diced
- 4 cups seafood stock
- 1 cup heavy cream (or half-and-half)
- 1 pound seafood mix (shrimp, scallops, clams – fresh or frozen)
- 1 cup corn kernels (fresh or frozen)
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and chopped celery, cooking until soft and translucent, about 5 minutes.
- Add diced potatoes and seafood stock. Bring to a boil, then lower heat and simmer for 10–15 minutes until potatoes are fork-tender.
- Stir in the cream, seafood mix, and corn. Season with thyme, salt, and pepper. Simmer 5–7 minutes until seafood is fully cooked and flavors meld.
- Turn off the heat and garnish with fresh parsley. Serve hot in bowls and enjoy immediately.
Notes
Don’t overcook the seafood. For a deeper flavor, simmer seafood shells in your stock beforehand. Store leftovers in the fridge for 3 days or freeze up to 2 months.
