  • 1 can (13.5 ounces) coconut milk
  • 4 cups chicken or vegetable broth
  • 1 tablespoon fish sauce (or soy sauce for vegetarian)
  • 1 tablespoon lime juice
  • 1 cup frozen mixed vegetables (bell peppers, carrots, peas)
  • 1 cup fresh cilantro, chopped
  • 1 cup dumpling wrappers (store-bought or homemade)
  • 1 pound ground chicken or tofu
  • 1 tablespoon ginger, minced
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Heat a tablespoon of oil in a large pot over medium heat. Add garlic and ginger, cooking until aromatic, about 1 minute.
  2. Add the red curry paste and stir well. Let it cook for 2 more minutes to deepen the flavor.
  3. Pour in the coconut milk and broth, stirring to combine. Bring to a gentle simmer.
  4. Stir in the fish sauce, lime juice, and frozen vegetables. Simmer for about 10 minutes.
  5. Meanwhile, prepare your dumplings with ground chicken or tofu and seasonings of your choice.
  6. Drop the dumplings into the simmering soup. Cook for 5-7 minutes until they float and are fully done.
  7. Stir in chopped cilantro, season with salt and pepper, and serve hot.
