  • Author: Navy Sinclair
  • Total Time: 25 minutes
  • Yield: 4 servings 1x

Description

A flavorful blend of tender chicken, vibrant bell peppers, and sweet pineapple, all tossed in a savory teriyaki glaze – perfect for dinner with family or friends.

Ingredients

Scale
  • 2 pounds chicken breast, diced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 can (8 oz) pineapple chunks, drained
  • 1/2 cup teriyaki sauce
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground or fresh grated ginger
  • Sliced green onions, for garnish
  • Cooked rice, for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced chicken and cook, stirring occasionally, until golden and cooked through (about 5-7 minutes).
  2. Stir in minced garlic and ginger, cooking for 30 seconds until aromatic.
  3. Add bell pepper slices and pineapple chunks. Sauté for 5 minutes until peppers are slightly softened.
  4. Pour in teriyaki sauce and stir until everything is evenly coated. Simmer for 2-3 minutes.
  5. Serve over cooked rice and top with green onions. Enjoy!

Notes

For deeper flavor, marinate the chicken in teriyaki sauce before cooking. You can also toss in other veggies like broccoli or snap peas for added texture and nutrition.
