Ingredients

  • 2 lbs pork shoulder – or use chicken thighs as a leaner choice
  • 1/2 cup brown sugar – adds rich sweetness
  • 23 jalapeños, sliced – adjust to taste
  • 4 garlic cloves, minced – brings depth
  • 1 cup chicken broth – or vegetable broth
  • 1 tbsp soy sauce – for umami flavor
  • 1 tbsp apple cider vinegar – a tangy touch
  • Salt and pepper to taste
  • Chopped cilantro – optional garnish

Instructions

  1. Trim excess fat from pork shoulder and cut into chunks for even cooking.
  2. In a slow cooker, mix brown sugar, jalapeños, garlic, broth, soy sauce, and vinegar until blended.
  3. Add pork to the mixture and season with salt and pepper.
  4. Cover and cook on low for 6–8 hours or on high for 4–5 hours, until meat shreds easily.
  5. Shred pork in the cooker and stir into the sauce. Let sit 15 minutes to absorb flavor.
  6. Serve over rice, in tacos, or burrito bowls. Garnish with fresh cilantro if desired.

Notes

For extra flavor, marinate pork overnight in the sauce. Add bell peppers or onions for a twist. Keeps up to 3 days in the fridge, or freeze for later meals.
