Instructions
- Preheat oven to 400°F (200°C).
- In a mixing bowl, toss carrots with honey, melted butter, salt, and pepper until evenly coated.
- Arrange carrots in a single layer on a baking sheet, leaving space between each for even roasting.
- Roast for 25-30 minutes, turning halfway through, until tender and slightly caramelized.
- Remove from oven and sprinkle with chopped parsley if using. Serve warm.
Notes
To elevate the flavor, add a dash of cinnamon or nutmeg to the honey mix. For quicker prep, use baby carrots and adjust cooking time as needed. Store leftovers in the fridge for up to 3 days.
