Description

  • 1/4 cup of honey (maple syrup for vegan option)
  • 2 tablespoons of unsalted butter (or coconut oil for dairy-free)
  • Salt, to taste
  • Pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, toss carrots with honey, melted butter, salt, and pepper until evenly coated.
  3. Arrange carrots in a single layer on a baking sheet, leaving space between each for even roasting.
  4. Roast for 25-30 minutes, turning halfway through, until tender and slightly caramelized.
  5. Remove from oven and sprinkle with chopped parsley if using. Serve warm.

Notes

To elevate the flavor, add a dash of cinnamon or nutmeg to the honey mix. For quicker prep, use baby carrots and adjust cooking time as needed. Store leftovers in the fridge for up to 3 days.
