Ingredients

  • 4 cups mixed greens (arugula, spinach, kale, or your favorites)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/2 cup shredded carrots
  • 1/2 cup roasted chickpeas or nuts
  • 1/4 cup thinly sliced red onion
  • 1 avocado, diced
  • 1/2 cup feta cheese (optional)
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon honey or maple syrup
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, red bell pepper, shredded carrots, roasted chickpeas, and red onion. Gently toss everything together.
