Ingredients

  • 1 pound pasta (penne, fusilli, or other short shape)
  • 1 cup sun-dried tomatoes in oil, roughly chopped
  • 1 cup fresh spinach or arugula, chopped
  • 1/2 cup black olives, sliced
  • 1/2 cup feta cheese, crumbled (or use mozzarella cubes)
  • 1/2 red onion, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup fresh basil, chopped (plus extra for garnish)
  • 1/3 cup olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package directions until al dente. Drain and rinse with cold water to stop cooking.
  2. In a large bowl, combine sun-dried tomatoes, spinach, olives, feta, red onion, garlic, and basil. Gently mix to combine.
  3. Add the cooled pasta to the bowl. Drizzle with olive oil and balsamic vinegar. Toss until evenly coated.
  4. Season with salt and pepper to taste. Cover and chill for at least 30 minutes to let flavors develop.
  5. Serve cold or at room temperature, topped with extra basil if desired.

Notes

For best results, don’t overcook the pasta. Resting in the fridge enhances the flavor. Use whole wheat or legume pasta for a healthier twist.
