- 4 large chicken breasts
- 2 cups fresh spinach, chopped
- 1 cup cream cheese, softened
- 1 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil, for cooking
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, mix chopped spinach, cream cheese, mozzarella, garlic, Italian seasoning, salt, and pepper until well combined.
- Slice a pocket into the side of each chicken breast using a sharp knife.
- Stuff the chicken breasts with the prepared spinach and cheese filling.
- Heat olive oil in a skillet over medium heat and sear the stuffed chicken for 5 minutes per side until golden.
- Place the seared chicken breasts into a baking dish and bake for 25–30 minutes, or until the internal temperature hits 165°F (75°C).
Notes
Use a meat thermometer to prevent overcooking. You can prep the filling in advance and even try different cheeses like cheddar, feta, or goat cheese.
