Description

Juicy chicken breasts filled with a creamy spinach and cheese mixture, baked to golden perfection, this dish is the definition of comfort food made easy.


Ingredients

  • 4 large chicken breasts
  • 2 cups fresh spinach, chopped
  • 1 cup cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil, for cooking

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, mix chopped spinach, cream cheese, mozzarella, garlic, Italian seasoning, salt, and pepper until well combined.
  3. Slice a pocket into the side of each chicken breast using a sharp knife.
  4. Stuff the chicken breasts with the prepared spinach and cheese filling.
  5. Heat olive oil in a skillet over medium heat and sear the stuffed chicken for 5 minutes per side until golden.
  6. Place the seared chicken breasts into a baking dish and bake for 25–30 minutes, or until the internal temperature hits 165°F (75°C).

Notes

Use a meat thermometer to prevent overcooking. You can prep the filling in advance and even try different cheeses like cheddar, feta, or goat cheese.
