Description

Ingredients

  • 2 cups all-purpose flour (swap half for whole wheat if preferred)
  • 1/4 cup granulated sugar (adjust to taste)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup fresh strawberries, chopped
  • 1 large egg
  • 1/2 cup heavy cream (or use yogurt for a lighter texture)
  • 1 teaspoon vanilla extract (optional for added flavor)

Instructions

  1. Preheat your oven to 400°F (200°C) to prepare for a perfect golden crust.
  2. In a large bowl, mix together flour, sugar, baking powder, and salt.
  3. Cut in the cold butter using your fingers or a pastry cutter until crumbly.
  4. Gently stir in the strawberries, being careful not to crush them.
  5. In a separate bowl, whisk together the egg, cream, and vanilla extract.
  6. Pour the wet mixture into the dry and stir until just combined; do not overmix.
  7. Turn the dough out onto a floured surface, gently knead, and shape into a 1-inch thick round.
  8. Cut into wedges or use a round cutter, and place on a parchment-lined baking tray.
  9. Bake for 15–18 minutes, or until lightly golden on top. Cool slightly before serving.

Notes
