Ingredients

  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 cup strawberries, chopped (fresh or frozen)

Instructions

  1. In a large bowl, whisk together flour, granulated sugar, baking powder, and salt.
  2. In a separate bowl, mix milk, egg, melted butter, and vanilla extract. Combine with the dry ingredients gently without overmixing.
  3. In a small bowl, blend softened cream cheese and powdered sugar until smooth.
  4. Heat a non-stick skillet over medium heat. Pour 1/4 cup of batter for each pancake and drop a teaspoon of the cream cheese mix on top.
  5. Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook another 1-2 minutes until golden.
  6. Repeat with remaining batter and filling. Keep cooked pancakes warm in a low oven.
  7. Serve with chopped strawberries and maple syrup. Enjoy!

Notes
