- 3 cups mixed greens (arugula, spinach, or spring mix)
- 2 cups cooked chicken, shredded
- 1 cup fresh strawberries, sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup sliced almonds (or pecans)
- 1/2 cup balsamic vinaigrette
- Salt and pepper to taste
Instructions
- Shred cooked chicken into bite-sized pieces and set aside. If using raw chicken, season with salt and pepper, cook thoroughly by baking or grilling, then let cool before shredding.
- In a large bowl, combine mixed greens, strawberries, and shredded chicken. Toss lightly to mix.
- Top with crumbled feta and sliced almonds.
- Pour balsamic vinaigrette over the salad and gently toss. Taste and adjust seasoning with salt and pepper as needed.
- Serve right away. Add extra strawberries or almonds for garnish if desired.
Notes
Add chickpeas or quinoa for extra protein. Swap strawberries with raspberries or mango if needed. Store components separately if prepping ahead.
