- 8 oz fettuccine pasta (or any pasta of choice)
- 1 lb sirloin steak (ribeye or filet mignon also work)
- 2 tablespoons olive oil
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 3 garlic cloves, minced
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Boil a large pot of salted water and cook fettuccine according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain.
- Heat olive oil in a skillet over medium-high heat. Season steak with salt and pepper, then sear for 3–4 minutes on each side. Remove from skillet and let rest.
- In the same skillet, sauté minced garlic until fragrant, about 1 minute.
- Add heavy cream and bring to a gentle simmer. Stir in Parmesan cheese and let it melt. Add pasta water a little at a time if sauce is too thick.
- Slice the rested steak into bite-sized pieces and add to the sauce. Toss in drained pasta and stir until well coated.
- Serve warm and garnish with chopped parsley.
Notes
Let the steak rest before slicing to keep it juicy. If you enjoy garlic, consider roasting it beforehand for a sweeter flavor. This dish also works well with chicken or shrimp as protein alternatives.
