- 12 oz pasta of your choice (fettuccine or penne work great)
- 1 lb Italian sausage (mild or spicy, your choice)
- 1 cup BBQ sauce (homemade or store-bought)
- 1/4 cup honey
- 1/2 cup diced bell peppers (red and yellow for color)
- 1/4 cup chopped red onion
- 2 cloves garlic, minced
- 1/2 tsp red pepper flakes (optional for extra spice)
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Bring a large pot of salted water to a boil and cook the pasta until al dente according to package instructions. Drain and set aside, reserving about 1/2 cup of the pasta water.
- In a large skillet over medium heat, brown the Italian sausage until fully cooked and crumbled, about 5-7 minutes.
- Add in the diced bell peppers, red onion, and garlic. Cook until the vegetables soften, around 3-4 minutes.
- Pour in the BBQ sauce and honey, stir, and let simmer for 2 minutes. Add red pepper flakes if desired.
- Add the cooked pasta to the skillet and toss well to coat. Use a bit of the reserved pasta water to loosen the sauce if necessary.
- Season with salt and pepper to taste. Garnish with fresh parsley and serve immediately.
Notes
Feel free to add extra veggies like zucchini or spinach, or spice it up more with jalapeños or hot sauce. This pasta stores well in the fridge for 3-4 days, perfect for meal prepping.
