- 1 lb linguine pasta
- 2 tablespoons olive oil
- 1 lb boneless, skinless chicken breasts, sliced
- 1 tablespoon Cajun seasoning (adjust to heat preference)
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions
- Boil linguine until al dente following package instructions. Salt the water well to boost the pasta’s taste.
- In a large pan over medium heat, warm the olive oil. Add chicken, sprinkle with Cajun seasoning, salt, and pepper, and cook for 5-7 minutes until golden and done.
- Set chicken aside. In the same skillet, sauté the onion until tender, about 3 minutes. Stir in garlic and cook for 1 more minute until aromatic.
- Pour in cream and chicken broth, scraping up any browned bits. Simmer for 5 minutes to let it thicken slightly.
- Add Parmesan and stir until melted and smooth. Return chicken to the pan, add the pasta, and toss well to coat everything evenly.
- Taste and adjust seasoning if needed. Serve hot, garnished with chopped fresh parsley.
Notes
Add a dash of hot sauce for extra heat if you like it spicy. Swap in shrimp or sausage for a variation, or go meatless with tofu or mushrooms.
