- 2 large cucumbers, diced

- 1 bell pepper, diced

- 1/2 teaspoon cumin
- 1/4 teaspoon cayenne pepper (or to taste)
- 4 tablespoons olive oil
- 3 tablespoons fresh lemon juice
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Rinse and drain chickpeas thoroughly to remove excess sodium and help them absorb the dressing better.
- In a large mixing bowl, combine chickpeas, diced cucumbers, red onion, and bell pepper. Toss well to mix.
- In a separate bowl, whisk together olive oil, lemon juice, smoked paprika, cumin, cayenne pepper, salt, and pepper to create the dressing.
- Drizzle the dressing over the salad mixture and gently toss until everything is evenly coated. Let it rest for 15 minutes to allow flavors to blend.
- Top with freshly chopped parsley before serving. Serve chilled or at room temperature.
Notes
To keep the cucumbers crisp, store the dressing separately if preparing ahead. Add grilled chicken or tofu for extra protein, or swap chickpeas with black beans for a different flavor profile.
