- 1 cup unsalted butter, softened
- 1 1/2 cups brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chocolate chips (semi-sweet or milk chocolate)
- 1 cup mini marshmallows
- 1 cup graham cracker crumbs
Instructions
- Preheat oven to 350°F (175°C). Grease or line a 9×13 inch baking pan with parchment paper.
- In a large bowl, cream together the softened butter and brown sugar until smooth and fluffy, about 2–3 minutes.
- Add the eggs one at a time, mixing well after each, then stir in the vanilla extract.
- In a separate bowl, whisk together flour, baking soda, and salt. Slowly mix the dry ingredients into the wet until just combined.
- Fold in the chocolate chips and graham cracker crumbs until well distributed. The dough will be thick.
- Gently stir in the mini marshmallows.
- Spread the dough evenly into the prepared baking pan. Bake for 25–30 minutes, until the edges are golden brown and the center is just set.
- Allow to cool in the pan for at least 10 minutes before cutting into bars.
Notes
For an extra layer of flavor, try swapping in dark chocolate chips or adding a pinch of cinnamon. Store in an airtight container at room temperature for up to a week, or freeze for longer storage.
