- 4 chicken breasts, thinly sliced
- 2 tablespoons vegetable oil
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 2 cups snap peas or green beans
- 5 garlic cloves, minced
- 1 tablespoon grated ginger
- 3 tablespoons soy sauce
- 2 tablespoons sriracha
- 1 tablespoon honey or maple syrup
- 1 tablespoon cornstarch mixed with 2 tablespoons water
- Cooked rice or noodles, for serving
Instructions
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken and stir-fry for 5 minutes until golden and cooked through.
- Add garlic and ginger, cooking for 1-2 minutes until fragrant.
- Stir in the bell pepper, broccoli, and snap peas. Cook for 3-4 minutes until veggies are tender-crisp.
- Whisk together soy sauce, sriracha, and honey (or maple syrup). Pour over the chicken and vegetables.
- Add the cornstarch mixture to thicken the sauce, cooking for 1 minute until glossy and thickened.
- Serve hot over rice or noodles. Garnish with sesame seeds if desired.
Notes
For extra flavor, marinate the chicken in soy sauce and garlic for 30 minutes before cooking. Add a splash of lime juice before serving for added brightness. This recipe can easily be doubled.
