- 12 oz fettuccine or pasta of choice
- 1 lb smoked sausage (like kielbasa)
- 2 cups heavy cream
- 1 cup grated Parmesan cheese
- 2 tablespoons butter
- 4 cloves garlic, minced
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Boil salted water in a large pot and cook pasta until al dente. Reserve a cup of pasta water, drain, and set pasta aside.
- In a large skillet over medium heat, melt butter and sauté garlic for about a minute, just until fragrant.
- Slice sausage into bite-sized pieces and cook in the skillet for 5-7 minutes until browned and heated through.
- Pour in the cream and simmer for 3-5 minutes. Stir in Parmesan cheese until smooth.
- Add cooked pasta to the skillet. Adjust consistency with reserved pasta water as needed. Season with salt and pepper.
- Serve warm, garnished with chopped parsley.
Notes
For added crunch, mix in sautéed spinach or roasted broccoli. Add a pinch of red pepper flakes for some heat. This dish doubles easily for larger groups.
