Ingredients

  • 12 oz fettuccine or pasta of choice
  • 1 lb smoked sausage (like kielbasa)
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Boil salted water in a large pot and cook pasta until al dente. Reserve a cup of pasta water, drain, and set pasta aside.
  2. In a large skillet over medium heat, melt butter and sauté garlic for about a minute, just until fragrant.
  3. Slice sausage into bite-sized pieces and cook in the skillet for 5-7 minutes until browned and heated through.
  4. Pour in the cream and simmer for 3-5 minutes. Stir in Parmesan cheese until smooth.
  5. Add cooked pasta to the skillet. Adjust consistency with reserved pasta water as needed. Season with salt and pepper.
  6. Serve warm, garnished with chopped parsley.

Notes

For added crunch, mix in sautéed spinach or roasted broccoli. Add a pinch of red pepper flakes for some heat. This dish doubles easily for larger groups.
