- 3 pounds beef chuck roast (or brisket for a different flavor)
- 1 onion, thinly sliced
- 4 cloves garlic, minced
- 3 cups beef broth (homemade if available)
- 1/4 cup soy sauce (low sodium if preferred)
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme (or fresh if on hand)
- 1 teaspoon black pepper
- 6 to 8 hoagie rolls
- 8 slices provolone cheese (or mozzarella)
Instructions
- Sear beef chuck roast in a hot skillet for a few minutes per side to enhance flavor (optional but recommended).
- Place sliced onion and minced garlic in the bottom of the slow cooker, then set beef on top.
- Pour in beef broth, soy sauce, Worcestershire sauce, thyme, and pepper; stir lightly to mix.
- Cover and cook on low for 8 hours or on high for 4 hours, until beef is tender enough to shred.
- Remove beef, rest briefly, then shred with two forks; return to slow cooker to absorb broth.
- To serve, pile beef onto hoagie rolls, top with provolone cheese, and broil briefly until melted; serve with au jus for dipping.
Notes
Avoid overcooking on high heat to keep beef juicy. Leftovers keep well for 3 days in the fridge; reheat gently.
