Description

After a long day, there’s nothing better than walking into the kitchen and being greeted by the rich aroma of tender beef mingling with crisp broccoli. This Slow Cooker Beef and Broccoli is a comfort food favorite that’s surprisingly easy to make at home. Toss everything in the slow cooker and let the magic happen while you relax.


Ingredients

  • 2 lbs flank steak, thinly sliced (sirloin works well too)
  • 4 cups broccoli florets (fresh or frozen)
  • 1 cup beef broth
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons brown sugar or honey
  • 2 teaspoons minced garlic
  • 1 teaspoon minced ginger (fresh or ground)
  • 2 tablespoons cornstarch
  • 1 tablespoon sesame oil (optional)
  • Cooked rice or noodles for serving

Instructions

  1. In the slow cooker, combine beef broth, soy sauce, brown sugar, garlic, ginger, and sesame oil to make a flavorful base.
  2. Add the sliced steak and stir to coat the beef well.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours until beef is tender.
  4. Stir in broccoli during the last 30 minutes of cooking to retain its color and texture.
  5. Mix cornstarch with a little water to form a slurry, then stir into the cooker for the final 15 minutes to thicken the sauce.
  6. Serve hot over rice or noodles and enjoy.

Notes
