- 3–4 pounds beef short ribs (bone-in preferred, or substitute with chuck roast)
- 1 cup balsamic vinegar (use a high-quality variety)
- 1/2 cup beef broth (vegetable broth works too)
- 1/4 cup brown sugar (adjust to taste)
- 1 large onion, diced (or shallots)
- 4 cloves garlic, minced (or garlic powder)
- 2 sprigs fresh rosemary (or 1 teaspoon dried)
- 1 teaspoon black pepper (add red pepper flakes if desired)
Instructions
- Sear the short ribs in a hot pan over medium-high heat for about 4-5 minutes per side until browned.
- In a slow cooker, mix together balsamic vinegar, beef broth, brown sugar, onion, garlic, rosemary, and black pepper.
- Place the browned short ribs in the slow cooker and coat with the mixture. Cover and cook on low for 6-8 hours or high for 4-5 hours.
- Remove the ribs once cooked. Optional: simmer the leftover sauce in a pan to thicken it to your liking.
- Serve over mashed potatoes or polenta and top with fresh herbs if desired.
Notes
Marinate the short ribs overnight in balsamic vinegar for enhanced flavor. Add carrots or potatoes into the slow cooker for a built-in side dish. Leftovers taste even better the next day!
