- 2 lbs beef stew meat – cut into 1-inch cubes
- 1 tablespoon olive oil
- 1 large onion – chopped
- 3 cloves garlic – minced
- 4 medium carrots – sliced
- 3 medium potatoes – diced (sweet potatoes work too!)
- 1 cup green beans – trimmed and halved
- 1 can (14.5 oz) diced tomatoes – undrained
- 2 cups beef broth
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat. Brown the beef on all sides to develop flavor.
- Transfer the seared beef to a slow cooker. In the same skillet, sauté the onion and garlic until soft and fragrant, about 3-4 minutes. Add them to the slow cooker.
- Add in carrots, potatoes, and green beans. Pour in the diced tomatoes with their juice and the beef broth. Stir in Worcestershire sauce, thyme, basil, salt, and pepper.
- Cover and cook on low for 8-10 hours or high for 4-6 hours, until the beef is tender and the flavors have combined beautifully.
Notes
For extra richness, a splash of red wine can be added before cooking. Assemble the night before and cook the next day for a fuss-free dinner. Taste before serving and adjust seasoning as needed.
