Description

Hearty, comforting, and packed with summer vegetables, this slow cooked beef casserole is a flavorful and easy dish perfect for those laid-back sunny evenings.


Ingredients

  • 2 lbs beef stew meat – cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 large onion – chopped
  • 3 cloves garlic – minced
  • 4 medium carrots – sliced
  • 3 medium potatoes – diced (sweet potatoes work too!)
  • 1 cup green beans – trimmed and halved
  • 1 can (14.5 oz) diced tomatoes – undrained
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Brown the beef on all sides to develop flavor.
  2. Transfer the seared beef to a slow cooker. In the same skillet, sauté the onion and garlic until soft and fragrant, about 3-4 minutes. Add them to the slow cooker.
  3. Add in carrots, potatoes, and green beans. Pour in the diced tomatoes with their juice and the beef broth. Stir in Worcestershire sauce, thyme, basil, salt, and pepper.
  4. Cover and cook on low for 8-10 hours or high for 4-6 hours, until the beef is tender and the flavors have combined beautifully.

Notes

For extra richness, a splash of red wine can be added before cooking. Assemble the night before and cook the next day for a fuss-free dinner. Taste before serving and adjust seasoning as needed.
