- 1 can (15 oz) black beans, rinsed and drained
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 can (10 oz) enchilada sauce
- 4 cups beef broth
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup shredded cheddar cheese, for topping
- Fresh cilantro, for garnish
Instructions
- In a large pot over medium heat, cook the ground beef until browned and fully done, breaking it apart as it cooks. Drain the fat.
- Add chopped onion and minced garlic, and sauté for 3 to 4 minutes until the onion is translucent.
- Mix in the diced tomatoes, black beans, and enchilada sauce. Let everything simmer briefly to blend the flavors.
- Pour in the beef broth, then season with chili powder, cumin, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 to 20 minutes.
- Before serving, stir in shredded cheddar cheese until melted. Serve hot, topped with fresh cilantro. Add tortilla chips on the side for extra crunch.
Notes
