Description

This Shrimp Cheese Sandwich is a melty, buttery, and flavorful seafood delight, combining tender shrimp with gooey cheese tucked between golden slices of grilled bread. It’s comfort food with a coastal twist, perfect for lunch or dinner.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 cup shredded cheese (cheddar, mozzarella, or your favorite)
  • 8 slices of bread (sourdough or your choice)
  • 4 tablespoons butter
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh herbs (like parsley or dill) for garnish

Instructions

  1. Season the shrimp by tossing them in a bowl with garlic powder, paprika, salt, and pepper until fully coated.
  2. Heat 2 tablespoons of butter in a skillet over medium heat and cook the shrimp for 2-3 minutes on each side until pink and cooked through. Set aside.
  3. Add the remaining 2 tablespoons of butter to the skillet. Place two slices of bread in the pan, add a layer of cheese, then cooked shrimp, more cheese, and top with another slice of bread.
  4. Grill each sandwich for 3-4 minutes per side or until golden brown and the cheese is melted, pressing lightly with a spatula.
  5. Once done, remove from heat, slice in half, sprinkle with fresh herbs, and serve warm.

Notes

Try adding sliced jalapenos or a dash of hot sauce for a spicy twist. Mix up the cheese selection for added flair; pepper jack or blue cheese are excellent options. Leftover shrimp? They make a great creamy shrimp gnocchi the next day.
