  • Author: Navy Sinclair
  • Total Time: 40 minutes
  • Yield: 6 servings 1x

Description

Enjoy the perfect balance of savory sausage and naturally sweet roasted potatoes in this easy, no-fuss sheet pan dinner. Great for busy nights or weekend feasts, it’s a nourishing and vibrant one-pan wonder.

Ingredients

Scale
  • 1 pound sausage (Italian, turkey, or chicken)
  • 2 large sweet potatoes, diced
  • 1 red bell pepper, chopped
  • 1 yellow onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss diced sweet potatoes, bell pepper, and onion with olive oil, garlic powder, smoked paprika, salt, and pepper until coated.
  3. Spread vegetables on one side of a baking sheet. Place sausage on the other side.
  4. Roast for 25–30 minutes, stirring halfway, until sweet potatoes are tender and edges are golden.
  5. Remove from oven and garnish with fresh parsley if desired. Serve warm.

Notes

Avoid overcrowding the pan to ensure proper roasting and caramelization. This dish makes excellent leftovers and can be reheated easily. For variation, swap in vegetables like zucchini or Brussels sprouts.
