- Salt and pepper to taste

Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss diced sweet potatoes, bell pepper, and onion with olive oil, garlic powder, smoked paprika, salt, and pepper until coated.
- Spread vegetables on one side of a baking sheet. Place sausage on the other side.
- Roast for 25–30 minutes, stirring halfway, until sweet potatoes are tender and edges are golden.
- Remove from oven and garnish with fresh parsley if desired. Serve warm.
