- 4 salmon fillets (around 6 oz each), skinless
- 1 cup lump or imitation crab meat
- 1/2 cup chopped shrimp
- 1/4 cup softened cream cheese
- 1/4 cup breadcrumbs
- 2 tablespoons chopped fresh parsley
- 1 tablespoon lemon juice
- Salt and pepper, to taste
- Olive oil, for drizzling
Instructions
- Set your oven to 375°F (190°C) for an even bake.
- Combine crab, shrimp, cream cheese, breadcrumbs, parsley, lemon juice, salt, and pepper in a bowl. Mix until evenly blended.
- Lay salmon fillets flat and carefully cut a pocket into each one without cutting through entirely.
- Fill each pocket generously with the seafood mixture.
- Drizzle with olive oil and season the tops with a bit more salt and pepper.
- Arrange fillets in a baking dish, cover with foil, and bake for 20-25 minutes. Remove foil in the last 5 minutes to let them lightly brown.
