Description

Ingredients

  • 4 salmon fillets (around 6 oz each), skinless
  • 1 cup lump or imitation crab meat
  • 1/2 cup chopped shrimp
  • 1/4 cup softened cream cheese
  • 1/4 cup breadcrumbs
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste
  • Olive oil, for drizzling

Instructions

  1. Set your oven to 375°F (190°C) for an even bake.
  2. Combine crab, shrimp, cream cheese, breadcrumbs, parsley, lemon juice, salt, and pepper in a bowl. Mix until evenly blended.
  3. Lay salmon fillets flat and carefully cut a pocket into each one without cutting through entirely.
  4. Fill each pocket generously with the seafood mixture.
  5. Drizzle with olive oil and season the tops with a bit more salt and pepper.
  6. Arrange fillets in a baking dish, cover with foil, and bake for 20-25 minutes. Remove foil in the last 5 minutes to let them lightly brown.
  7. Let them rest briefly before serving. Enjoy warm with your choice of side.

Notes

Fresh herbs like parsley boost flavor; consider dill or chives for a twist. Any leftover filling makes a great seafood dip when baked in ramekins.
