- 1 lb linguine pasta
- 1 lb boneless, skinless chicken breasts, sliced into strips
- 2 tablespoons Cajun seasoning (adjust to taste)
- 2 tablespoons olive oil
- 1 bell pepper, sliced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions
- Bring a large pot of salted water to a boil and cook the linguine according to package instructions. Drain and set aside, reserving 1 cup of pasta water.
- Coat the chicken strips with Cajun seasoning until well covered.
- In a large skillet over medium-high heat, warm the olive oil. Add the seasoned chicken and cook for 5–7 minutes, until golden and fully cooked. Remove from skillet and set aside.
- In the same skillet, sauté the bell pepper, onion, and garlic for 3–4 minutes until soft and aromatic.
- Pour in the heavy cream and stir well. Let simmer for 2–3 minutes until slightly thickened.
- Return the chicken to the skillet and add in the cooked linguine. Toss to combine, adding reserved pasta water as needed to loosen the sauce. Stir in Parmesan and season with salt and pepper.
- Garnish with chopped parsley and serve hot.
Notes
This recipe can be made lighter with half-and-half or dairy alternatives. Add extra veggies like spinach or mushrooms if you like. Store leftovers in the fridge for up to 3 days.
