  • 1 pound breakfast sausage (mild or spicy)
  • 4 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ cup maple syrup (for serving)
  • Butter or oil (for frying)

Instructions

  1. Cook sausage in a skillet over medium heat, crumbling it until fully cooked. Drain and let cool.
  2. In a shallow bowl, whisk together the eggs, milk, vanilla, and cinnamon.
  3. Flatten each bread slice with a rolling pin or your hand. Spoon some sausage onto one end and roll tightly. Repeat for all slices.
  4. Heat butter or oil in a skillet over medium heat. Dip each roll-up in the egg mixture and place seam-side down in the skillet.
  5. Cook each roll-up for 3-4 minutes per side, until golden brown and crisp. Transfer to paper towels to drain excess oil.
