- 1 lb Italian sausage (or substitute with turkey sausage for a leaner option)
- 1 cup long-grain rice (brown rice works well too)
- 2 cups chicken broth (or use vegetable broth)
- 1 medium onion, chopped (yellow or sweet)
- 1 bell pepper, chopped (any color)
- 1 can diced tomatoes (14.5 oz) or fresh if in season
- 1 cup corn (canned or frozen)
- 2 teaspoons garlic powder (or 2 minced garlic cloves)
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C). Brown the sausage in a large skillet over medium heat, breaking it into small crumbles as it cooks.
- Add chopped onion and bell pepper to the skillet. Cook until softened, about 5 minutes.
- Stir in rice, chicken broth, diced tomatoes, corn, garlic powder, paprika, salt, and pepper. Mix thoroughly.
- Transfer everything into a greased casserole dish. Cover with foil and bake for 30 minutes.
- Remove foil and bake for another 15 minutes, or until rice is fully cooked and most of the liquid is absorbed.
- Let it sit a few minutes before serving. Add fresh herbs on top if desired and enjoy!
