  • 3 pounds Yukon Gold or red potatoes, diced
  • 1 cup crumbled feta cheese
  • 1/4 cup olive oil
  • 2 teaspoons garlic powder
  • 1 tablespoon fresh chopped rosemary (or 1 teaspoon dried)
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) to help achieve crispy potatoes.
  2. In a large mixing bowl, toss the diced potatoes with olive oil, garlic powder, rosemary, salt, and pepper until evenly coated.
  3. Spread the potatoes out in a single layer on a baking sheet for even cooking.
  4. Roast for 30–40 minutes, flipping once halfway through, until the potatoes are golden and crispy.
  5. Remove from the oven and sprinkle crumbled feta over the hot potatoes to slightly melt.
  6. Top with chopped parsley if using, and serve warm.

Notes

Avoid overcrowding the baking sheet so your potatoes roast instead of steam. For a twist, add crushed red pepper flakes or mix in seasonal veggies like bell peppers or zucchini.
