Description

These Rice Krispie Cookies with Chocolate Chips are chewy, crispy, and loaded with sweet nostalgia. They’re a perfect balance of soft cookie dough and crunchy cereal, studded with gooey chocolate chips.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups Rice Krispies cereals
  • 1 cup chocolate chips (milk, semi-sweet, or dark)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the butter, granulated sugar, and brown sugar until smooth, about 2–3 minutes.
  3. Mix in the eggs one at a time, then add the vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture and stir until just combined.
  5. Fold in Rice Krispies and chocolate chips evenly.
  6. Scoop dough onto the prepared baking sheet, spacing each cookie about 2 inches apart.
  7. Bake for 10–12 minutes, until edges are golden brown. Let cool on the sheet before transferring to a wire rack.

Notes

Don’t overmix the dough to keep cookies soft and chewy. For added crunch, toss in chopped nuts or toasted coconut. Store in an airtight container for up to a week or freeze for longer storage.
