- 1 ½ cups all-purpose flour
- 2 tablespoons sugar (or coconut sugar)
- 1 tablespoon baking powder
- 1 tablespoon cocoa powder
- ½ teaspoon salt
- 1 cup buttermilk (or milk with 1 teaspoon vinegar)
- 1 large egg
- 2 tablespoons vegetable oil or melted butter
- 1 tablespoon red food coloring
- Cream cheese frosting, for topping
Instructions
- In a large mixing bowl, combine the flour, sugar, baking powder, cocoa powder, and salt. Mix until everything is evenly incorporated.
- In a separate bowl, whisk together the buttermilk, egg, oil or butter, and red food coloring. Pour this into the dry ingredients and stir gently, do not overmix.
- Heat a non-stick skillet or griddle over medium heat and lightly grease. Pour ¼ cup of batter for each pancake. Cook until bubbles form and the edges appear set, about 2-3 minutes. Flip and cook the other side for 1-2 minutes more.
- Transfer cooked pancakes to a warm oven (200°F) to keep them hot while you finish the rest. Serve with a generous swirl of cream cheese frosting on top.
Notes
For extra indulgence, sprinkle chocolate chips or chopped nuts into the batter. Store any leftovers in the fridge and reheat on the skillet for best results. Double the recipe for a larger crowd, these disappear fast!
