Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Whisk together flour, cocoa powder, baking soda, and salt in a bowl. Set aside.
- Cream butter and sugar in a large bowl until fluffy, about 3-4 minutes. Mix in the egg, red food coloring, and vanilla extract.
- Gradually stir in dry ingredients just until combined. Fold in chocolate chips if using.
- Scoop dough onto prepared sheet using a tablespoon, spacing about 2 inches apart.
- Bake for 10-12 minutes until edges are set. Cool on sheet for a few minutes before moving to a wire rack.
- Beat cream cheese and powdered sugar together until smooth. Frost cookies once completely cool.
