Red Velvet Cake Truffles

  • Author: Navy Sinclair
  • Total Time: 1 hour 25 minutes
  • Yield: 24 truffles 1x

Description

These Red Velvet Cake Truffles are rich, velvety, and deliciously easy to make. A perfect bite-sized indulgence for any celebration or sweet craving.

Ingredients

Scale
  • 1 box of red velvet cake mix (or chocolate cake mix as a variation)
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1/2 cup cream cheese frosting (store-bought or homemade)
  • 8 ounces white chocolate, for melting
  • Sprinkles or cocoa powder, for garnish

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a 9×13 inch baking pan. Prepare the cake batter using the mix, oil, and eggs, combining until smooth.
  2. Transfer batter to the prepared pan and bake for 30 to 35 minutes. Cake is done when a toothpick comes out clean. Let it cool completely.
  3. Once cooled, break the cake into fine crumbs in a large bowl. Mix in the cream cheese frosting until fully combined and dough-like.
  4. Form the mixture into 1-inch balls and set on a baking sheet lined with parchment paper. Chill in the refrigerator for 30 minutes.
  5. While the truffles chill, melt white chocolate in a microwave-safe bowl in short bursts, stirring between each interval.
  6. Dip each chilled ball into the melted chocolate, ensuring full coverage. Place back on parchment and top with sprinkles or cocoa powder while coating is still wet.
  7. Let truffles sit until the coating is set, about 30 minutes. Store in an airtight container in the fridge.

Notes

To add texture, mix in chopped nuts or mini chocolate chips. Truffles can be frozen in an airtight container and thawed in the fridge before serving. Try colored candy melts to match holiday or party themes.
