Description

Ingredients

  • 130g powdered sugar
  • 100g egg whites (about 3 large eggs, aged)
  • 50g granulated sugar
  • 1 teaspoon unsweetened cocoa powder
  • 1 teaspoon red food coloring
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 100g cream cheese
  • 50g unsalted butter
  • 200g powdered sugar (for filling)
  • Splash of vanilla extract (for filling)

Instructions

  1. Sift together almond flour, powdered sugar, and cocoa powder in a bowl. Set aside.
  2. Whip aged egg whites on medium speed until foamy, then gradually add granulated sugar. Increase speed and whip to stiff peaks (about 5-7 minutes).
  3. Fold in red food coloring and vanilla extract until evenly colored.
  4. Gently fold in the dry mixture until the batter is smooth and flows like lava without being runny.
  5. Transfer to a piping bag with a round tip. Pipe 1.5-inch circles on parchment-lined baking sheets, spaced slightly apart.
  6. Let rest at room temperature for 30 to 60 minutes until a skin forms and they no longer stick to the touch.
  7. Preheat oven to 150°C (300°F). Bake 15-18 minutes. Let cool completely.
  8. For filling, beat cream cheese, butter, powdered sugar, and vanilla until smooth and fluffy. Pipe onto half the shells and top with remaining shells.

Avoid overmixing the batter to maintain structure and prevent flat macarons. Be patient during the resting stage—it’s essential for getting that signature macaron ‘foot’. Always weigh ingredients for consistent results.
