Description

Crunchy, flavorful, and incredibly simple to whip up, these Ranch Roasted Chickpeas are a snack-time game changer. They’re packed with protein and fiber, making them the perfect healthy alternative to chips, and versatile enough to toss into salads or enjoy on their own.


Ingredients

  • 2 cans chickpeas (15 oz each), drained and rinsed
  • 2 tablespoons olive oil
  • 2 tablespoons ranch seasoning mix
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) to get the chickpeas nice and crispy.
  2. Pat the chickpeas dry with a clean towel to remove any moisture.
  3. In a large bowl, mix olive oil, ranch seasoning, garlic powder, onion powder, salt, and pepper. Toss in the chickpeas until they’re evenly coated.
  4. Spread the chickpeas in a single layer on a parchment-lined baking sheet.
  5. Roast for 25 to 35 minutes, stirring halfway through, until golden and crunchy.
  6. Let them cool for a few minutes before serving. They’ll crisp up even more as they cool.

Notes

Make sure the chickpeas are completely dry before roasting to ensure maximum crunch. Add a pinch of cayenne if you like a little heat, or try swapping in barbecue or taco seasoning for a fun twist.
