- 4 lbs chicken thighs (bone-in, skin-on)
- 1 cup soy sauce
- 1 cup pineapple juice
- 1/2 cup brown sugar
- 1/4 cup apple cider vinegar
- 4 cloves garlic (minced)
- 1 tablespoon fresh ginger (grated)
- 1 teaspoon black pepper
- 1 teaspoon sesame oil (optional)
- Chopped green onions (for garnish)
Instructions
- Whisk soy sauce, pineapple juice, brown sugar, vinegar, garlic, ginger, black pepper, and sesame oil in a bowl to make the marinade.
- Place chicken in a large resealable bag or bowl and pour the marinade over it. Refrigerate for at least 30 minutes or overnight.
- Preheat grill or oven to medium-high. Oil grill grates if using grill, or preheat oven to 425°F (220°C).
- Remove chicken from marinade and let excess drip off. Grill for 6-7 minutes per side or bake for 30-35 minutes until internal temp reaches 165°F (75°C).
- Rest chicken for 5 minutes, then garnish with chopped green onions before serving.
Notes
Try grilling pineapple slices alongside the chicken for an added tropical touch. This marinade also works great with shrimp or veggies. Store leftovers for wraps or salads throughout the week.
