  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour (or whole wheat)
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon pumpkin pie spice (or 1/2 tsp cinnamon + pinch of nutmeg)
  • 1 cup chocolate chips (optional but tasty!)

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking dish with parchment paper.
  2. In a large bowl, mix together pumpkin puree, granulated sugar, brown sugar, melted butter, eggs, and vanilla until smooth.
  3. In another bowl, whisk flour, cocoa powder, baking powder, salt, and pumpkin pie spice.
  4. Gradually stir the dry ingredients into the wet mix until just combined. Avoid overmixing.
  5. Fold in chocolate chips gently if using.
  6. Spread batter evenly in prepared pan. Bake for 25-30 minutes, or until a toothpick comes out with a few moist crumbs.
  7. Let cool in the pan before slicing. They’re even better the next day!
