Ingredients

- 2 cups warm water (about 110°F)
- 1 packet (2 1/4 teaspoons) active dry yeast
- 6 cups all-purpose flour, plus more for dusting
- 1/4 cup granulated sugar
- 1 tablespoon salt
- 1/4 cup baking soda
- 1 large egg, beaten
- Coarse sea salt, for sprinkling
Instructions
- In a large bowl, mix warm water and yeast. Let it sit for 5 minutes until foamy.
- Add flour, sugar, and salt. Stir to form a dough, then knead on a floured surface for 5 minutes until smooth.
- Place the dough in an oiled bowl, cover, and let rise for 1 hour or until doubled in size.
- Preheat oven to 450°F (232°C) and line two baking sheets with parchment paper.
- Bring 10 cups of water to a boil in a large pot. Carefully add baking soda and reduce to a simmer.
- Punch down the dough and cut into 1–2 inch pieces. Roll each piece into a ball.
- Drop each dough ball into the simmering water for 30 seconds. Remove with a slotted spoon and place on baking sheets.
- Brush with beaten egg and sprinkle with coarse sea salt.
- Bake for 12–15 minutes until golden brown. Let cool slightly and enjoy!
Notes
Freeze baked bites and reheat in the oven for a quick snack. Try cinnamon sugar or everything seasoning for variety. Mix in cheese or spices to flavor the dough.
