Description

Ingredients

  • 1 large head of cabbage (savoy or green)
  • 1 pound ground beef or turkey
  • 1 cup uncooked rice
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef or vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and cook for 3-4 minutes until translucent. Stir in minced garlic and cook for 1 minute.
  2. Add the ground meat to the pot and cook until browned. Season with salt, pepper, paprika, and thyme.
  3. Stir in uncooked rice, diced tomatoes with their juice, and broth. Bring to a gentle boil, then lower to a simmer.
  4. Core and slice the cabbage into strips. Add to the pot and simmer for 30-40 minutes until cabbage is tender and flavors are blended.
  5. Taste the soup and adjust seasonings as needed. Serve hot, garnished with fresh herbs if desired.

Notes

For a smoky variation, try adding diced smoked sausage or leftover holiday ham. This soup freezes well for easy meal prep. Extra cabbage? Sauté it for a quick side or try it in a fried cabbage and shrimp stir-fry.
