- 1 1/4 cups all-purpose flour
- 1/2 cup unsalted butter (softened), plus more for greasing
- 1/4 cup powdered sugar
- 1/4 teaspoon salt
- 1 large egg yolk
- 1 cup shelled pistachios, finely ground
- 1/2 cup granulated sugar
- 3/4 cup heavy cream
- 1 teaspoon vanilla extract
- Pinch of salt
- Optional: chopped pistachios and edible flowers for garnish
Instructions
- Preheat oven to 350°F (175°C) and grease a 9-inch tart pan with removable bottom.
- In a large bowl, mix together flour, butter, powdered sugar, and salt until the texture is crumbly.
- Stir in the egg yolk and mix until a dough forms. Press evenly into the tart pan, including up the sides. Prick the base with a fork.
- Bake crust for 15-20 minutes until lightly golden, then let cool slightly.
- In a separate bowl, whisk ground pistachios, granulated sugar, heavy cream, vanilla, and a pinch of salt until smooth.
- Pour pistachio mixture into the cooled crust and bake another 25-30 minutes until set with a slight jiggle.
- Cool completely before removing from pan. Garnish as desired, slice, and serve.
Notes
For deeper flavor, add a few drops of pistachio extract. Tart flavor improves the next day. Leaving some pistachios slightly chunky adds texture and visual appeal.
