Description

This homemade Pistachio Tart is a showstopper dessert that’s as beautiful as it is delicious. Featuring a flaky, buttery crust and a luscious pistachio cream filling, it’s sure to impress at any gathering.


Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter (softened), plus more for greasing
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt
  • 1 large egg yolk
  • 1 cup shelled pistachios, finely ground
  • 1/2 cup granulated sugar
  • 3/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional: chopped pistachios and edible flowers for garnish

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9-inch tart pan with removable bottom.
  2. In a large bowl, mix together flour, butter, powdered sugar, and salt until the texture is crumbly.
  3. Stir in the egg yolk and mix until a dough forms. Press evenly into the tart pan, including up the sides. Prick the base with a fork.
  4. Bake crust for 15-20 minutes until lightly golden, then let cool slightly.
  5. In a separate bowl, whisk ground pistachios, granulated sugar, heavy cream, vanilla, and a pinch of salt until smooth.
  6. Pour pistachio mixture into the cooled crust and bake another 25-30 minutes until set with a slight jiggle.
  7. Cool completely before removing from pan. Garnish as desired, slice, and serve.

Notes

For deeper flavor, add a few drops of pistachio extract. Tart flavor improves the next day. Leaving some pistachios slightly chunky adds texture and visual appeal.
