- 4 cups Rice Krispies cereal
- 1/2 cup unsalted butter
- 10 oz mini marshmallows
- 1 cup shelled pistachios, chopped (plus extra for topping)
- 1/2 tsp vanilla extract
- Pinch of salt
Instructions
- In a large saucepan over low heat, melt the butter. Stir in the mini marshmallows until fully melted and smooth.
- Mix in the vanilla extract and a pinch of salt once the marshmallows are melted.
- Take the pan off the heat and fold in the Rice Krispies and chopped pistachios. Stir until evenly coated.
- Press the mixture into a greased 9×13-inch baking dish. Use a spatula or greased hands to press down firmly. Sprinkle more chopped pistachios on top if desired.
- Let the mixture cool at room temperature for about one hour. Cut into squares and serve.
Notes
You can drizzle melted chocolate on top for an extra indulgent finish. Store in an airtight container for up to a week. Try using almonds or cashews as alternative nuts.
