A bright, flavorful twist on traditional fried rice with juicy shrimp, sweet pineapple, and colorful veggies. Perfect for a quick, tropical-inspired meal.

- 2 cups cooked jasmine rice (preferably day-old)
- 1 lb shrimp, peeled and deveined
- 1 cup pineapple chunks (fresh or canned and drained)
- 1 cup diced bell peppers (red, yellow, and green)
- 1/2 cup frozen peas
- 1/4 cup chopped green onions
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and pepper, to taste
- Optional: chili flakes for heat
Instructions
- In a large skillet or wok, heat sesame oil over medium-high heat. Add garlic and sauté for 30 seconds until aromatic.
- Add shrimp, season with salt and pepper, and stir-fry for 3–4 minutes until pink. Remove and set aside.
- Add bell peppers to the skillet and cook for 2–3 minutes. Stir in peas, pineapple, and rice.
- Return shrimp to the skillet, drizzle with soy sauce, and stir everything together. Let it cook for another 2–3 minutes.
- Top with green onions and adjust seasoning if needed. Serve hot and enjoy!
Notes
Day-old rice gives the best texture. You can swap shrimp with tofu or chicken, and add more veggies for a vegetarian version.
