Description

A bright, flavorful twist on traditional fried rice with juicy shrimp, sweet pineapple, and colorful veggies. Perfect for a quick, tropical-inspired meal.


Ingredients

  • 2 cups cooked jasmine rice (preferably day-old)
  • 1 lb shrimp, peeled and deveined
  • 1 cup pineapple chunks (fresh or canned and drained)
  • 1 cup diced bell peppers (red, yellow, and green)
  • 1/2 cup frozen peas
  • 1/4 cup chopped green onions
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper, to taste
  • Optional: chili flakes for heat

Instructions

  1. In a large skillet or wok, heat sesame oil over medium-high heat. Add garlic and sauté for 30 seconds until aromatic.
  2. Add shrimp, season with salt and pepper, and stir-fry for 3–4 minutes until pink. Remove and set aside.
  3. Add bell peppers to the skillet and cook for 2–3 minutes. Stir in peas, pineapple, and rice.
  4. Return shrimp to the skillet, drizzle with soy sauce, and stir everything together. Let it cook for another 2–3 minutes.
  5. Top with green onions and adjust seasoning if needed. Serve hot and enjoy!

Notes

Day-old rice gives the best texture. You can swap shrimp with tofu or chicken, and add more veggies for a vegetarian version.
